Meatless Mondays

So I watched Food Inc. again. Well sort of. The guys were playing poker and extremely loud so I heard bits and pieces. But since I had seen bits and pieces before I figure I have seen most of the documentary. We have changed a lot of our habits since the first viewing but seeing it again and thinking about my boys I feel like there is so much more I can do. We shop and eat locally as much as possible. We use fresh ingredients as much as possible. Our local markets we shop offer fresh and natural foods. But then I started thinking, how can I believe what they are putting on the labels? So much about food labels is jargon and can be hard to decifer. But more so, the guidelines for what can be deemed whole grain, all natural, etc are so loose or not regulated at all I really need to look into where and how our food is processed. Mainly I am talking about meat here. I feel pretty good about reading labels on prepackaged items and since we don't buy a lot of those anyway I am not as concerned. So this week I hope to accomplish that, researching where our local markets get their meat. Okay so on to meatless monday! One of the changes we adopted into our lives since watching Food Inc.

Monday: Fish tacos with cilantro lime rice



Tuesday: Jambalaya with turkey sausage



Wednesday: Dinner with family



Thursday: glazed ham with potato casserole and cornbread



Friday: Chicken pesto salad with grilled cheese sammy's



Saturday: eat out or with family night



Sunday: Grilled pork chops with coffee glaze grilled corn on the cob and dinner rolls



This week's recipe:

Cilantro Lime Rice from the Big Oven App



1 tsp oil

2 tbsp cilantro chopped

1 c white basmati rice

2 c water

1/2 tsp salt



1. heat oil over med high heat in pot

2. add rice and lime juice, stir and cook for 1 minute

3. add water and salt and bring to full rolling boil

4. cover and simmer on low for 20 minutes exactly

5. turn off heat and let it sit covered 15 minutes

6. when ready to serve, add cilantro and fluff with fork
