Meatless Monday

So even though I am still educating myself I decided to sign us up for meatless Monday. Basically it is a movement to not eat meat one day a week to educate people about factory farming, eating fresh and locally grown food and it's pretty popular. Chef Mario Batali declared all his restaurants are meatless on Monday, the mayor of San Francisco is asking the city to do the same. I must admit I am kind of excited to try out new stuff and think this will be fun. I was however apprehensive in telling my husband. We have done the occassional meal that was meatless but he definitely gave me a funny look when I told him. In fact he said you mean YOU are going meatless..? I explained that no we as a family are for dinner, I don't expect him to for go his turkey sandwich at lunch. So on Mondays I will be posting our dinner plans sans meat. Yesterday we enjoyed delicious tomato basil and cheese ravioli from fresh and easy market. I made marinara out of 2 cans
orlf itlia. Diced tomotoes. First I sauteed 3 cloves of garlic and 1 shallot in some olive oil. Added a touch of parsley then tomatoes. Simmer on low 30-45 min pour over ravioli and voilà! Instant deliciousness! We alsonpaired that with a Cesar salad with homemade croutons and garlic cheesy bread. I enjoyed a glass of redwood creek Pinot noir while Aiden and Matt enjoyed water!!!
