Meatless Monday

Okay so tried to do this last night but ran out of time. Seriously I am beginning to turn into one of those people who hate Mondays!! I used to like them because it's our admin day at work so I am off the floor most of the day but wow. It seems like every Monday I am late. Late in the morning, late leaving work, late getting kids, late making dinner. It's like an endless cycle. So because I was running late we did pasta again for meatless Monday. But we did a pasta we have never done before. We had potato gnocchi in a creamy garlic alfredo sauce, with a cesar salad and rustic rolls. Not bad not the best either. I used store bought sauce and it was sooo salty! I guess I learned my lesson, cream sauce is never too hard to make so never again with the store bought.
For next Monday's Menu I am doing bean and cheese burritos wet with spanish rice. For some weird reason that's what I am craving, which almost never happens.
