Lazy Meatless Monday

So I am being lazy today and have decided today's meatless menu will be spaghetti with marinara and portobella mushrooms. Which will be topped off with a green salad, fresh bead, and maybe stuffed baby bellas too. Oh and cannot forget the Pinot Noir. Yup that sounds good. The father in law is visiting so I figure this will ensure he doesn't feel awkward with the veggie menu and my husband was not very happy with the idea of meatless today. Just when I thought it was going well all of a sudden he gets all pissy at the idea of veggie pizza? Really? That is one of my favorite indulgences. In fact my mouth is watering now thinking about a chewy crust topped with bell pepper, olives, onions, tomatoes, oh and artichokes. Ok officially starving must go home now and cook. Here is my recipe for stuffed baby bellas:

10-25 baby bella mushrooms
1 pkg stuffing (whatever your favorite brand or go with a store brand doesn't matter nor does the flavor)
shredded mozarella
1/4 c butter unsalted cut into cubes
2 garlic cloves minced

cook stuffing according to directions
while that is going wipe mushrooms with damp paper towel and pull out stems
(you can save and add to spaghetti for extra mushrooms!)
in a baking dish set mushrooms cap side down leave a little room between each one
drop cubes of butter (could substitute evoo) in between mushrooms
spoon garlic in between mushrooms as well
fill mushrooms with the stuffing
top with mound of cheese
bake at 400 until mushrooms are soft and cheese is melted

great add ins:

crab meat
sausage (for those non meatless days :)
